This wine is about pure fun and enjoyment. On the nose it is elegant, with light floral aromas, peach and apple like fruit, and subtle lees notes. Despite the dosage being at the Brut level, it also has plenty of fruit flavour which along with it’s vibrant and fresh mousse makes for a fuller more jovial style.

Knightor Brut NV

Grape varieties:                      Changes depending on the season, but predominantly Seyval Blanc, Reichensteiner, Chardonnay, Pinot Blanc and Pinot Noir

 

Vinification:                             Grapes for this non-vintage sparkling wine were hand picked into small crates before being very gently whole bunch pressed. It was fermented in small, separate batches, mainly in stainless steel, with a small amount in old oak barriques. Following blending the wine underwent secondary fermentation in the bottle and after 9 months lees ageing was disgorged early to preserve the fresh and fruitful nature of the style.

Winemaker’s notes:                 This wine is about pure fun and enjoyment. This is our standard offering, with vintage wines only being made in the best years and from the best parcels. It does not desire to look like Champagne or follow any other model apart from that it should be seen as ‘English sparkling wine’. On the nose it is elegant, with light floral aromas, peach and apple like fruit, and subtle lees notes. Despite the dosage being at the Brut level, it also has plenty of fruit flavour which along with it’s vibrant and fresh mousse makes for a fuller more jovial style.

Our first sparkling wine. Tasting note: Pale straw with hints of green. Delicate, slightly floral nose with citrus and apple like notes. There are slight yeast autolysis characters reminiscent of baked bread, though it offers primarily youthful, fruit forward aromas.
The palate is very well balanced, with a vibrant, quite vigorous bead of fine bubbles. There are nice, restrained fruit flavours and it has lovely crisp acidity giving way to a clean refreshing finish. An approachable yet elegant sparkling wine.
