Knightor Vermouth Cocktails

Our collection of English wines and vermouth are incredibly versatile and beautifully compliment a number of classic and contemporary cocktails.
Here are a few of our favourite recipes, created with locally sourced ingredients and our favourite spirits from Cornwall, the South West and beyond.
From celebratory toasts to detox mocktails, there's a drink for any event. ​
​What will you be mixing up?

​Cornish Spritz

Our signature cocktail is a light, easy-drinking aperitif that's full of botanical flavour and the finest English wines. So simple, yet so delicious and equally as refreshing, the Cornish Spritz is excellent for any occasion - we like it best by the sea, or al-fresco on a Cornish summer's evening. 

Ingredients: 
50ml Knightor Rosé Vermouth, 50ml Navas Soda Water, Ice

Method: Add a few cubes of ice to a whisky glass or small tumbler, then add Knightor Rosé Vermouth, top up with 50ml soda and add a slice of orange.

The Clover Club

A delicious, fruity offering that is bursting with flavour, The Clover Club cocktail can be traced back to the late 1800s and Philadelphia’s Bellevue-Stratford hotel.
Ingredients: 10ml Knightor White Vermouth, 50ml Dry Gin, 5ml Grenadine, one Egg white, Raspberry to garnish

Method: Add all the ingredients, excluding the garnish, into an empty cocktail shaker. Seal and dry shake to emulsify. Open the shaker, add ice and shake again. Double strain into a chilled glass and garnish.

The Knightor Punch 

A cocktail that is true to its name and packs a punch! A carefully curated blend of Knightor Bacchus, Knightor White Vermouth and Navas Ginger Ale is brought together to create the ultimate Cornish serve.
Ingredients: 175ml Knightor Bacchus 2021, 50ml Knightor White Vermouth, slices of Lemon, Lime and Orange, top with Navas Ginger Ale, sliced Chilli Pepper, Ice

Method: Start with a wine glass filled with ice, adding the slices of lemon, lime and orange. Pour with the 175ml of Knightor Bacchus 2021, followed by the 50ml Knightor White Vermouth and top up with fiery Navas Ginger Ale. Garnish with a sliced chilli pepper to finish. 

​The Cornish Palm

A great option for rum lovers, the Cornish Palm blends Rathlee Rum and Knightor Rosé Vermouth to create a fine Cornish cocktail with flavours of vanilla, cherry, warm spice and a gentle bitterness. ​

Ingredients: 40ml Rathlee's Golden Barrel Aged Rum, 40ml Knightor Rosé Vermouth, two dashes of Angostura Bitters, an Orange zest twist

Method: Shake ingredients together and then strain into a chilled martini glass. Garnish with an orange zest twist. ​

St Clements Fizz

A perfect cocktail with friends on a day of celebration, we created our St Clements Fizz with Sipsmiths Gin and our Knightor Classic Cuvée white sparkling.

Ingredients: 10ml Knightor White Vermouth, 20ml Sipsmiths Lemon Drizzle Gin, 50ml Orange juice, Knightor Brut Classic Cuvée to taste

​Method: Combine the vermouth, gin and orange juice in an ice-filled shaker and shake well. Double strain into a glass and top up with the sparkling wine. Garnish with an orange twist and sprig of rosemary.

50-50 Dry Martini

Deliciously Cornish, this version of a dry martini is extremely unique and remains relatively unknown. Incorporating two special ingredients; the crisp nature of Tarquin's Gin and the intense flavour of the Knightor Dry Vermouth. If you know and love your martinis, this one is definitely for you!

Ingredients: 50ml Tarquins Cornish Dry Gin, 50ml Knightor Dry Vermouth, Ice, Rosemary sprig, Grapefruit peel

Method: Add loads of ice to mixing glass, along with the Tarquins Gin, Knightor Dry Vermouth. Stir for 30 seconds, strain and pour into a chilled martini glass. Garnish with red grapefruit peel twist and rosemary

​Knightor Cornish Negroni

Fresh and fruity, the Cornish Negroni is so easy to create and gives so much in return! While the original roots of this cocktail lie in the temperate climate of Tuscany, we think our Cornish Vermouth and local Gin add another dimension to this classic. ​

Ingredients: 25ml Knightor Rosso Vermouth, 25ml Cornish Gin, 25ml Campari, Ice

Method: Pour the gin, vermouth and Campari into a mixing glass or jug with ice. Stir well until the outside of the glass feels cold. Strain into a tumbler and garnish with a slice of orange.

The Bloody Maid

A Cornish twist on a classic Bloody Mary, this cocktail contains one of your five a day, Cornish Vodka, Knightor Dry Vermouth, a spicy kick and a whole lot of flavour to create an exciting variation on a truly understated cocktail. We blend our Knightor Dry Vermouth with Aval Dor Potato Vodka from Colwith Farm Distillery, but you can be as healthy or adventurous as you like! ​

Ingredients: 25ml Knightor Dry Vermouth, 25ml Aval Dor Vodka, 100 ml Tomato Juice, Black Pepper, Salt, Worcestershire Sauce, Tabasco, Ice 

Method: Fill a tall glass with ice. Pour Aval Dor Vodka and Tomato Juice into the glass. Add Tabasco, Worcestershire Sauce and Salt to the mix. Stir throughly. Cover one end of the Celery Stick with Pepper, dunk either end in the cocktail, and enjoy! ​​

Ciao Bella

Incredibly fresh and flavoursome, this exciting spin on the classic Ciao Bella is light, refreshing, and easy to create - it's the perfect cocktail for mixing up at a celebratory gathering with friends and family. ​

Ingredients: 25ml Knightor Rosé Vermouth, 25ml Salcombe Distillery Gin, 15ml Limoncello, a dash of Orange bitters, Fever Tree Mediterranean Tonic Water to finish, a dried slice of Orange to garnish

Method: To begin, fill a glass to 3/4 with ice. Add the Knightor Rosé Vermouth and the Salcombe Distillery Gin. Add Limoncello to the mix, and a dash of orange bitters. Finish off with the Fever Tree Mediterranean Tonic Water. Stir the cocktail in the glass. Garnish with the dried orange.​

Pomegranate Fizz

​What better way to celebrate the deliciousness of pomegranate than in a vermouth cocktail? This refreshing blend comes from our expert bar staff!

Ingredients: 40ml Knightor Rosé Vermouth, 30ml White Rum, 1/2 Pomegranate seeds + juice, 15ml Grenadine, 15ml Lime juice, 10ml Egg white, 30ml Knightor Rosé Classic Cuvée

Method: Add Knightor Rosé Vermouth, white rum, pomegranate, grenadine, lime juice, sugar and egg white to Boston shaker. Hard dry shake (no ice) for 15 seconds. 3/4 Fill Boston shaker with ice. Hard-shake for 10 seconds. Double strain into glass using Hawthorne strainer and fine sieve. Top with Knightor Rosé Classic Cuvée. Garnish with pomegranate seeds

The ​Knightor Spritz

If the Cornish Spritz is our signature cocktail, then this is the one we like to keep to ourselves. Incredibly light and with a subtle kick of herbal goodness, we love serving this drink in the warmer months, using fresh rosemary from our herb garden.

Ingredients: 50ml Knightor White Vermouth, 100ml Navas Soda Water, Ice, Lemon juice, sprig of Rosemary

Method: 
Fill a short glass with ice and add vermouth, then soda water and dash of lemon juice. Finish with a sprig of rosemary.

- Buy five Sunday lunch main course at the Winery or five large plates at The Vine and we will treat you to your sixth on the house. 
- The card can be used across both sites with customers more than welcome to mix stamps to achieve the five required. 
- The card is valid for one year after the first stamp date. The card will be activated when first dated. 
- The complimentary sixth meal is not redeemable on the date of first purchase.
- One card per transaction. For example, if a group of four splits the bill into two, they would get two cards.
